We love this time of year at our Kilndown restaurant. As we move further into 2019, the promise of spring gets us excited in the kitchen and at the bar, with our chefs embracing new opportunities to go back to nature and make modern British menus that tie in beautifully with the season. It’s just as exhilarating for our front of house team too, who introduce a wide range of wines to match.

On our farm, we’re already getting ready for the change in the elements. As well as doubling our growing capacity by planting 10 additional raised beds, we’ve been replanting our second polytunnel to welcome an abundance of fresh fruits, including strawberries, raspberries, gooseberries and blackcurrants. Meanwhile, our tomato seedlings have also started to germinate in our seeding room.

These organic ingredients will gradually make their way into our ever-changing dishes, as we begin preparing options that make the most of our field-to-fork ethos. It’s this emphasis on homegrown, locally-sourced sustainability that got us noticed for Chef of the Year at last year’s Kent Life Food & Drink Awards, and down to the top three in Produced in Kent’s Taste of Kent Awards 2019.

As a restaurant that really does eat local and champion the best of Kent, we couldn’t be prouder of the county we work and live in. Here are just a couple of the highlights we’ve got coming up as we head towards springtime in the Garden of England…

Valentine’s Day

With the most romantic day of the year around the corner, we’ve been busy prepping our Valentine’s dishes. The 10-course seasonal tasting menu has been created with as much love and passion as the day itself, including standout dishes like mackerel, rhubarb and horseradish, as well as goat, cauliflower and chilli, and apple, cinnamon and acorn. At £85, it also comes with a complimentary glass of bubbly, plus you can add perfect wine pairings from sommelier Sally Murphy for an additional £35. Mother’s Day

It’s never too early to start thinking about treating the most important woman in your life to the meal of a lifetime. For us, few things bring friends and family together quite like real food and drink, and our mums tend to be the inspirational cornerstone of our knowledge and enjoyment of cooking and eating.
